Green Pancakes Recipe

I don’t know about you, but breakfast in our house is always a struggle. My son is a big morning BIG morning eater. I skip breakfast (the cool kids are calling it intermittent fasting). So, I want fast, easy and healthy for Lincoln. I started making these pancakes a while back, but I have played around with the recipe to make it more filling for my wild man.

Green Pancakes

  • large handful spinach
  • 1/2c. oats
  • 1/3c. applesauce
  • 1 egg
  • 1 TBSP chia seeds
  • drizzle of honey
  • sprinkle of cinnamon
  • dash of salt

Blend everything up in a blender. Heat a pan with a little bit of coconut oil. Pour pancake mix and cook like normal pancakes. They won’t bubble up when it’s time to flip! Keep an eye on the edges– they’ll let you know when they’re ready to flip over.

** I don’t really measure things out. I just get close**

Welcome to Frankly Frazzled, a place where I share all my crazy ideas that I try to make come to life. I'm a stay at home mom that loves a good project. I would love to live in a Restoration Hardware world, but I'm more on a Target budget... but like the "I can only stay on the outer perimeter and not venture in the aisles" budget. Enter DIYs- a way to make me feel like Chip AND JoJo. On top of doing projects, I also have to keep my son alive and keep myself from being mistaken for a homeless person. So, keep an eye out for easy recipes and quick getting ready hacks.
