Green Pancakes Recipe

I don’t know about you, but breakfast in our house is always a struggle. My son is a big morning BIG morning eater. I skip breakfast (the cool kids are calling it intermittent fasting). So, I want fast, easy and healthy for Lincoln. I started making these pancakes a while back, but I have played around with the recipe to make it more filling for my wild man.

Green Pancakes

  • large handful spinach
  • 1/2c. oats
  • 1/3c. applesauce
  • 1 egg
  • 1 TBSP chia seeds
  • drizzle of honey
  • sprinkle of cinnamon
  • dash of salt

Blend everything up in a blender. Heat a pan with a little bit of coconut oil. Pour pancake mix and cook like normal pancakes. They won’t bubble up when it’s time to flip! Keep an eye on the edges– they’ll let you know when they’re ready to flip over.
